I love blueberries and I love this easy-to-make Blueberry Snack Cake. It’s the kind of recipe that you can use to serve as a snack or make it for breakfast. It is super moist and guaranteed to impress your mother-in-law. Lol!

Blueberry Snack Cake

Ingredients:

2 cups all-purpose flour

1 - 1/2 cups sugar

1/2 cup cold butter

1 teaspoon baking powder

1 cup of Fagan Family Farm Fresh Milk

2 eggs

2 cups fresh or frozen blueberries

Farmhouse Tip

If using frozen blueberries, do not thaw before adding to the batter.

Directions:

In a mixing bowl, combine flour and sugar. Cut in butter until crumbly. Set aside 3/4 cup for topping. Add the baking powder, milk, and eggs to the remaining mixture; mix well.

Pour into a greased 9x13 pan. Sprinkle with blueberries and reserved crumb mixture. Bake at 350 degrees for 45 minutes or until golden brown.
